Artichoke Stuffed Mushrooms

Ingredients

1 Tbsp. Pure Grapeseed Oil
1 onion, chopped
24 mushrooms, stems removed
and chopped
Salt and pepper to taste
1 12-oz. jar marinated artichoke hearts,
drained and chopped
8 oz. cream cheese, softened
2 Tbsp. sour cream
1 cup shredded cheese, Italian blend
2 Tbsp. grated Parmesan cheese
½ tsp. garlic salt, or to taste

Directions

Preheat oven to 350°F. Heat oil in skillet over medium heat. Cook onions and mushroom stems until onions are translucent, about 5 minutes. Season with salt and pepper. Transfer mixture to large bowl and add artichoke hearts, cream cheese, sour cream, shredded cheese and Parmesan cheese. Season with salt, pepper and garlic salt. Stir mixture until blended. Stuff mushroom caps and arrange on griddle. Bake until filling begins to bubble, about 20 minutes. Serve in Fantasia Serve & Entertain Bowl. Serves 12.
